It's the most refreshing and savoury dish I know, made of finely chopped parsley, with tomatoes, mint, onion, bulgur, and seasoned with olive oil, lemon juice, salt and pepper. It is very healthy as full of vitamins C. It is best prepared by a Lebanese mistress of the house. Not to be confused with the dry Maghrebine Taboulé made of semolina they only know in France and Maghreb countries. You grind up the mix of chickpeas and your seasoning, roll into a ball, and fry it. You can eat it plain or make a sandwich with pita bread, cucumber, and yogurt. Yum yum...
