If you haven’t met the Trapper yet, keep progressing the main story until you do.
The Trapper will have your Red Dead Redemption 2 lost legendary bear pelt in his possession already. Unfortunately, this does mean you won’t be able to sell it but it only goes for around $60 anyway. Thankfully, you will be able to use it for its precious crafting purposes, though.
